Chilled "Adult" Watermelon Soup

On a hot summer day, nothing says relaxation better that a big bowl of ice cold watermelon soup.  Spiked with a little something special to take the edge off.  :-)
  • Seedless Watermelon
  • Fresh Strawberries
  • Simple syrup
  • 1 cup Water
  • Lemon
  • Vodka
  • Feta crumbles
Cut the watermelon in half. Divide halves into quarters. Cube the melon, place in large glass mixing bowl. Use the odd shaped sizes for the blender. 1/2 melon cubed, 1/2 melon blended. Add 1 cup water to blender.  Toss in a few Strawberries for an extra boost of color. Result should be a slushie consistency. Add lemon juice & salt to taste. Skim off the foam. Use simple syrup to sweeten to taste. Add vodka as well. Strain, then pour over cubed watermelon. Garnish with feta.

This turned out even better than expected.  I made the soup a day ahead of time & let it chill overnight, so it was perfectly temperatured by the time guests started to arrive.
