Strawberry Calpico & Vodka Gelée

Excited by the prospect of a higher end jello shot, and since they no longer serve the Mojito sampler jelly shots at Bar Nineteen12, creating my own set of alcoholic jelly seemed like the next logical step.

Calpico.  In first presenting this shot to my uncultured friends, they were like wtf is calpico?!  It's an uncarbonated Japanese soft drink that has a light, somewhat milky flavor.  Similar to plain vanilla.  It's made from water, nonfat dry milk & lactic acid.  Recently they've started stocking flavored versions of this drink & seeing as how my boyfriend decided to buy a liter of the strawberry, it was readily available for mixing.

Strawberry Calpico & Vodka Gelée
1/2 cup Strawberry Calpico
1/2 cup water
4 oz Vodka
1 packet of Knox Gelatin
Splash of Cranberry Juice (for added color)

In a saucepan sprinkle the packet of Knox Gelatin over the cold water.  Let sit for a minute to dissolve.  While slowly heating the mixture add in the Calpico, Vodka & Cranberry Juice, mixing for just a few minutes until incorporated.  Turn off the heat and pour into your serving bowls.  In my case I ended up using sake glasses. Refrigerate over night.

Top with a little whipped cream & enjoy!
